Mustard oil contains many fatty acids and also essential oils.
Mustard oil consists of cold-pressed oil from mustard seeds. The seeds and grains contain essential oils that ensure the mustard has a spicy flavour. These essential oils are also available in radishes or watercress.
The mustard plant originally comes from Asia and arrived in Europe in the late Middle Ages. Mustard oil is still widely used in India today. Traditional Indian medicine, Ayurveda, also uses hot essential oils for healing massages.
It's not spicy in itself, and it even tastes a bit bland. Only when mixed with water does the typically spicy flavour known as mustard emerge.
